“Brownie Batter Almond Joy” Protein Overnight Oats 21 DAY FIX APPROVED!

Ok so I have seen this circulating all over FB… THIS RECIPE IS 1.5 YELLOW, 1/2, BLUE AND 1/2 RED if you add the yogurt.
and since I eat something close to this almost every day, I decided to make my own version of it…
I hope you enjoy it as much as I do!

Of course.. you can make this without the coconut and almond so it’s regular brownie.. but who doesn’t love an almond joy!?!

I Put the containers it would take up for you too!

What you will need….
1/4 cup of old fashioned oats (I prefer Bob’s Red Mill Thick Rolled)-1 YELLOW
1/4 Cup of unsweetened Coconut Milk..( canned just has a better flavor in my opinion)-1/2 YELLOW
-so if you don’t like coconut you can add almond milk or cashew.. or just regular low fat milk…
1 Tbs Unsweetened cocoa powder (I like to get mine from Trader Joe’s)
1/2 Cup of plain greek yogurt… this is optional but adds extra protein.
1/8 tsp Salt…. yes this really does impact flavor in my opinion
1/2 tsp vanilla extract (optional)
1/4 tsp almond extract (optional)
1/4 tsp Coconut extract (optional)
1 1/2 TBS of chopped almonds (1/2 Blue container)
2 TBS Chocolate Shakeology (or protein powder) Gluten Free, GMO free and all natural products.. can’t beat that!
If you use the Shakeology I find that I don’t need any sweetener… if you do, I add a little liquid stevia.

I really like adding a tsp of Chia seeds.. but it’s not really needed to make the recipe work!

Ok Here comes the SUPER EASY PART!!!

Toss all of this in a mason jar, or tupperware with a top, cover with the lid, mix it up and set it in the fridge overnight. This is good for about 2 days, so if you don’t get to it tomorrow… eat it the next day!

I refrigerate overnight usually but you could let it just sit for an hour or so until the oats absorb the liquid or microwave for 60 seconds and eat warm..
for my running friends.. this is a favorite of mine post run!

    can i make this with chocolate coconut water instead of the coconut milk and the cocoa? or will it affect the consistency too much?

      I have made mine with water and it is fine… most people prefer milk, so the nutmilk was an alternative… I would love to know how it comes out for your taste!

    How many servings does this make?

      1/4 cup of oats is one serving for me… depending on your caloric intake you might want to double it. I find the 1/4 cup very filling one it absorbs the liquids!

      yes, use some cocoa powder but your containers/ calories will be different. I like the consistency the protein powder gives it.

    Mine is super thick. The picture looks as tho I may have done something wrong but I followed the recipe exactly. Any suggestions?

      add more liquid, either more nutmilk or water is fine and “free” you could also reduce the protein powder.. it’s a preference, I like mine thick… but feel free to adjust to your taste!

    Would steel cut oats work?

      I have actually never used steel cut for this, I am not sure, I usually use Bob’s Red Mill This cut Oat, I don’t like instant oats.

      Yes they do, and honestly, because I use the small mason jars, I can make each one their own flavors. Some of mine prefer a berry flavored, and others like banana chocolate.. so everyone is happy and I really didn’t have to do any extra work!

    With Shakeology and Yogurt, it would be 1 1/2 red.

      it only uses 2 TBS of chocolate shakeology, that is about 1/3 serving of shakeology so it doesn’t count as a full red or even half a red

      Because I follow the 21 Day fix meal plan, I only eat oatmeal for breakfast… but being a creature of habit, I eat some variation of oatmeal with egg whites every single morning. I don’t however eat oatmeal more than once a day.

    Don’t forget you can adjust this to be nut free by leaving out the nuts, and using soy or whole milk… and of course eliminating the extracts!
